Sage’s counterweighted lid is its useful difference: it rests lightly on the sandwich instead of pressing it flat. White bread, sourdough, seeded rye and paninis can crisp and turn golden without the filling being squeezed out. Smooth plates avoid the deep grooves of a contact grill. An open-melt position holds the top plate above the food for cheese-topped sandwiches or reheating toppings without direct contact. The plates are fixed, however, and there is no adjustable temperature, interchangeable set or drip tray. Follow the manual and let the appliance cool before wiping it. Stainless steel, a long handle, an on/off switch and upright storage make it pleasant to use, but it still needs a fairly wide cupboard. Worth considering if you make paninis often and dislike squashed bread.
